"Mountain Jelly Vegetable," or Gong Cai, is processed celtuce stem. Harvesting requires identifying a mature, solid (not hollow) stalk with large leaves. The stalk is cut, and the leaves removed for use as a green vegetable. The stalk is then peeled, shaved into thin ribbons, and sun-dried on mats until curled and dehydrated. The resulting "mountain jelly vegetable" ribbons are sorted, bundled, and packed.
